Athena's Tilapia in Sour Cream Parmesan Sauce

Athena's Tilapia cooked in Sour Cream Parmesan sauce.

(Ma's Recipe, made for Grouper)(Cleopatra Maltezo Marler, mother of Capt. Ben Marler of Destin, FL)(pictured g. granddaughter Christina Victoria Cole and husband, Seth Cole, of Destin on their wedding day)

For 2 Tilapia (or any white fish such as grouper) filets, on an oiled baking sheet

Mix well in a small bowl about 1/2 c. Sour Cream, Salt and Pepper to taste, and a few drops of Tobasco sauce. Then "frost" the fish filets with it, covering completely (use up all the sour cream mixture). Sprinkle liberally with Parmesan cheese, and garnish with Dill sprinkled lightly over the cheese (optional). Pretty, and adds some flavor, too.

Broil on LOW, for about 7-8 minutes for each inch of thickness of fish. Keep checking by flaking meat with a fork, until done. (If you don't have Low Broil, you could improvise with 450 Bake and brown slightly under broiler afterwards)

DELICIOUS, and Restaurant Worthy.

Serve with bread or dinner rolls, Pilaf (rice cooked in broth or with a bouillion cube) or Buttered Rice, and maybe a canned vegetable like chilled asparagus with lemon. Or a salad. Note: I make perfect microwave rice by cooking 2 c. water, 1 c. rice, Uncovered in microwave for 14 minutes. If you cover it, it will run over. Fast and foolproof. Flake and serve.

My New Interests

Flamenco Dancing! Fans for dancing (the kind you wave), Betty and Veronica comic books from the Bronze Age (1970-1979) on CD. The "Last Dinner on the Titanic" book and recipes! Do you realize that in 2 years, the Titanic will be One Hundred Years Old? Also, recreated orchestra music from actual songs played on her fateful, maiden voyage. Many of them are for dancing, which I love.
I saw the 1976 movie, Dona Flor and Her Two Husbands, and was transfixed by the portrayal of Salvador, Brazil in "Bahia." Dona Flor is fanning herself at a table in a supper club waiting to dance tango with her husband on her birthday. Her hair was upswept in a dark pompador. The effect was so latin, ladylike, and so unlike the way women dress to go out nowadays. One reason the fan dropped out of popularity will be of course that we now have air conditioning. I decided I wanted a fan, such as the one my Grandma Betty once gave me, to carry to indoor and outdoor restaurants this summer. There are so many beautiful ones from the faraway land of Spain. I am tempted to get one to match every outfit. www.lands-faraway.com

HAPPY NEW DECADE

HAPPY NEW YEAR and HAPPY NEW DECADE. So, do we call it "0-10?" "2K10?" or just "2010?" By whatever will shall call it, it is a new beginning in our lives, and in the history of this world.
I resolve to remain close to my Lord Jesus, to my husband Keith, and to my family, whom I love dearly.
And I resolve to write more often, perhaps shorter columns.
My father, Capt. Ben Marler, blesses and amazes me with his consistency in writing I AM NOT ASHAMED OF JESUS on http://captben61.blogspot.com/ He has readers in Australia, India and Indonesia and all over the US, and growing. They search the internet for "what will happen after I accept Jesus", "Jesus Inside" and "tips to worship Jesus." Some of the places are those where Christianity is under heavy persecution. How blessed we are to be living in the USA.
Compared to my Dad, my writings seem pretty unimportant. I resolve to share my faith more often. And if you enjoy what you see, I am humbled to remember that nothing compares with Jesus Christ.

Why I got involved in "Dancesport"

When first introduced to ballroom dancing, I was enduring a painful divorce and seeking physical "therapy" to heal my wounded self image. After an accelerated six week course and learning the rudimentary steps for 10 dances, I realized how much I had benefitted and the fun was about to end. The world of dance is very glamorous and the appeal was growing with each lesson, and I began to read more. I had never heard of "competitive ballroom dancing," and when seeing that term online in the London Times internet edition I mentioned it to my instructor with a laugh, and he intoned in a curiously sudden way, "it's called Dancesport. When you come back for your next lesson, everything will be different. You will have to unlearn some bad habits you have been making, and I will be very hard on you. And...you'll need some dancesport shoes, not the "character" shoes you have been wearing." I looked down at my borrowed flesh toned, granny heeled "Minnie Mouse" round toes with embarrassment.

Ole! Strictly Ballroom Australian Cult Film Still My Favorite (click to watch)

When I was first introduced to ballroom dancing, I had never heard of "competitive ballroom dancing." I actually thought it was a joke when I saw a society column in a London newspaper. (I like to catch up on world news online.) I mentioned it to my instructor, and he said, in a tone of all seriousness, "it's called Dancesport."

A like-minded friend is good to have

How many times have you wished for a place to just confide anonymously in a friend who is in the same boat you are? Not everyone understands your mindset. Some you confide it will respond negatively to your problems, judge you, or offer advice that is insincere. True friends are hard to find. Experiences that are joyful to you should be shared, but even then, you have to be careful if you don't want to offend.
If you can't afford therapy, and your friends are a little too close for comfort, perhaps you would enjoy joining this group. If you need encouragement with a goal, such as losing weight or eating more healthily or saving money, you can be a part of a group that is doing the same. You can log on at midnight and give a status of what you are doing, feeling, thinking and update it throughout the day. Maybe this concept is not news to you, but it was to me. I never found a group I wanted to join before now. Perhaps you will, too.//
